The margarita I make when I want to taste the agave — smoky mezcal, fresh lime, a whisper of agave nectar, and a salt rim that's been kissed with Tajín. No blender, no shortcuts. Just a shaker, good ice, and the best limes you can find.

Ingredients

◆2 oz mezcal (or blanco tequila)
◆1 oz fresh lime juice (about 1 lime)
◆3/4 oz agave nectar
◆1/2 oz Cointreau or triple sec
◆Flaky salt + Tajín, for the rim
◆A lime wheel, for garnish

Method — Step by Step

1Run a lime wedge around the rim of a rocks glass, then dip the rim into a plate of mixed flaky salt and Tajín. Set aside.
2Fill a cocktail shaker with ice. Add the mezcal, fresh lime juice, agave nectar, and Cointreau.
3Shake hard for 15 seconds — until the shaker frosts over and your hand hurts. This is not a gentle shake.
