The story
The mole from San Angel Inn in Mexico City — the centuries-old restaurant in a former monastery in San Ángel where I first understood what mole could be. Not bitter, not sweet — a deep, dark sauce of twenty-plus ingredients where chiles, chocolate, nuts, and spices melt into something that tastes like the whole history of Mexico in a spoon. This is my recreation of that bowl, poured over poached chicken. It takes a day. It's worth every minute.
