The story

Every Arizona kitchen has a version of this. A deep red chile sauce, a slow braise, and the smell of home. Mine uses dried guajillo and ancho, a little mesquite honey to round it, and whatever tough cut is cheap at the market.

Ingredients

◆2 lb beef chuck, cut into 2-inch cubes
◆6 dried guajillo chiles, stems and seeds removed, toasted
◆3 dried ancho chiles, stems and seeds removed, toasted
◆1/2 white onion, roughly chopped
◆4 garlic cloves, peeled and minced
◆1 tbsp mesquite honey

Method — Step by Step

1Soak the chiles in hot water 20 min; blend with onion, garlic, and stock until smooth.
2Brown the beef in lard; set aside.
3Strain the sauce into the pot; simmer until deep red.
